Chicken and Dumplings

Ingredients

  • 2 Chicken thighs
  • 1 Onion Diced
  • 2 Celery Stalks Diced
  • 2 Carrots Diced
  • 1 Tbsp Garlic Minced
  • 4 Quarts Water
  • 2 Tsp Salt (to taste)
  • 1 Tsp Pepper
  • 1 Tsp Curry Powder
  • 1/2 Tsp Red pepper flakes
  • 1/2 Tsp Thyme
  • 2 Bay Leaves
  • 1 Can Pillsbury Grand biscuits (use small can w 5 biscuits)

Instructions

  • Add water, chicken, vegetables and spices to a stock pot. Bring to boil, then simmer for at least one hour.
  • Remove and discard chicken skins. Remove meat from bones, dice, and return both to pot. Continue to simmer for another hour. Add more water if necessary.
  • Remove chicken bones and bay leaves. Bring to a low boil.
  • Cut biscuits into small (1/2) pieces and drop into soup. Let cook, stirring occasionally, for another 10 minutes or until desired consistency.
